We all have things we would love to accomplish in life, right?  Everyone has that dream job that they would love to have. For a lot of folks that dream is opening their own business, however, most don't follow through. Or if they do, they certainly don't do it 3 months after graduating high school. I mean, who would be brave enough to take on that sort of challenge?

Meet Sophie Duffin.

Miss Duffin, who graduated in May from Manhattan High School, dreamed of having her own bakery and coffee shop, and recently that dream became a reality when she opened Sophie's Bakery, Cafe, and Espresso in Manhattan.

Sophie was a member of the local 4-H growing up and knew that she wanted to start her own business, so while most people her age are heading off to college, Sophie took her savings and took a chance, and so far, the results have been impressive. Although, she reminded me that she couldn't do it without the support of her family and the people of Manhattan.

The shop is located right next to Ace Hardware and serves both walk-ups and drive-throughs. However, last week during the Manhattan Potato Festival, several folks on horses decided to use the drive-through, which the young business owner is "totally fine with".

So, walk-up, drive-up, or giddy-up, it's all good at Sophie's.

Sophie's serves up both breakfast and lunch, and the claim to fame is the cinnamon rolls, which I can tell you, are amazing.

In fact, I would go so far as to say they're one of the best cinnamon rolls I've ever had. However, there are a few different items to choose from to get your morning started off the right way.  Plus, they serve up some delicious sandwiches for lunch.

Sophie's is open Tuesday through Saturday from 7 am until 2 pm, and joins other local Manhattan establishments like Sir Scott's Oasis, The Porch at Nogan's, and Subway. So no matter if you're traveling by car, by foot, or by horse, make sure you stop by and meet Sophie.
